Rotorua is great - mud volcanoes in the local park, hot springs, Maori culture. Hire a canoe and padle across Lake Tarawera to a wild campsite heated by hot springs. If you are down that way, I would also recommend a day or two in Waitomo for the glow worm caves. Auckland is a nice city to spend some time in, get a feel for the place and see how the Kiwis live. Get a trip to Rangitoto Island, or go on a racing yacht. Lots do do there.
